Two Ingredient Slow Cooker Beef Brisket

This easy Two Ingredient Slow Cooker Beef Brisket will be a dinner home run.  Cooking brisket in the slow cooker with salsa verde makes the meat tender and juicy.

Oh my goodness!  I just got back from a full four days away from my family.  Can you believe it?  I was visiting with my parents with no hubby and no kids.  It was amazing.  No offense family, I did miss you but it was completely relaxing.  It's not so much what we did that was relaxing, it's what I didn't do...

  • no laundry
  • no cooking (yes, I get tired of getting dinner on the table every night)
  • no homework
  • no picking up socks
  • no grocery shopping
  • no nagging

It was glorious.  I'm not sure I've ever taken time away from the family like that and I highly recommend it for any busy mom.  I feel renewed and more energetic.  My kids even looked different when I came home; more grown up.  I swear I saw a bit of fear in my husband's eyes.  He was glad I was home.  This was a chance for him to see how many little (and big) things I handle around here that he might take for granted.  The kiddos missed me too; mostly my cooking since they ate pizza for four days straight.

I highly suggest you give it a try, even for one night in a local hotel.  I've always told my husband that being a mom is hard because there's no yearly review, no feedback from your "boss" and no written goals for improvement.  We have to find a way to be internally motivated to work hard to be a good parent and it's the hardest job ever.  Seeing them grow up and turn into caring, responsible and motivated young adults is rewarding for sure but I also like a thank you now and then. ?

Speaking of thank yous - you will get them for this dinner.  You don't have to tell anyone how stupid easy this is.  Place beef brisket is slow cooker and pour salsa verde on top. Cook on low 8 hours.  Done.

Seriously.  Stupid easy.

Serve this tender and delicious Two Ingredient Slow Cooker Beef Brisket on corn or flour tortillas.  Put it on a bun with avocado for a sandwich.  Pile in between two flour tortillas with lots of cheese and make a quesadilla.  Put a scoop of it on top of a taco salad or grain bowl.  Cover a sheet pan with tortilla chips and scoop the brisket and grated cheese on top for the best nachos ever.  So many options so be sure to make enough to have leftovers!

Ingredients

  • 3-4 pound beef brisket
  • 2 cups green salsa verde I used Herdez
  • Or if you prefer a milder flavor use -
  • 1 cup green salsa verde
  • 1 cup water
  • Your favorite toppings.

Instructions

  • Turn slow cooker on low.
  • Put the beef brisket in and top with salsa verde. I used 2 cups salsa verde and the beef was spicy. If you prefer a milder flavor use 1 cup salsa verde and 1 cup water. Cook on low for 6-7 hours.
  • Top with your favorite toppings.

    Thank-you! My husband had made some brisket and I could not eat it! I threw it in the crockpot with the Herdes green sauce and saved it. You gave me the inspiration to save it!
