Roasted Green Beans

Roasted Green Beans are a quick and easy side dish for any day of the week.  Roasting the green beans and tomatoes in the oven gives them extra flavor while leaving them firm.  {keto, gluten free, whole30, vegan}

Happy Five Ingredient Friday to everyone!

My favorite stores are packed with fresh green beans on sale, so I've been looking for some new ways to spice them up.  It is one of the handful of green vegetables that my kids will actually eat.  They seem to be mild enough that my kids can handle them so we eat a lot of them.  

Usually, I just saute them in olive oil and garlic for about 8-10 minutes. My family doesn't like overcooked green beans that start to get soft.

HOW TO MAKE OVEN ROASTED GREEN BEANS...

These are quick, easy and hands-off.  

Just trim the beans with a knife and toss them in a bowl with the tomatoes. Add olive oil, garlic, salt, and pepper and toss to coat. Place on a sheet pan and throw it in the oven at 425°. In about 10 minutes you'll have delicious green beans with soft and juicy tomatoes.

Ingredients

  • 1 ½ pounds fresh green beans trimmed
  • 1 pint cherry or grape tomatoes
  • 2 tablespoon olive oil
  • 3 teaspoon garlic
  • salt and pepper to taste

Instructions

  • Preheat oven to 425°.
  • Place all ingredients in a bowl and toss well.
  • Place on a sheet pan and cook for about 10 minutes.
  • Serve warm.
