Chia pudding has been around for ages now but I know some of you still haven't hopped onto the chia pudding bandwagon.  It's seriously so tasty because it's a blank slate for whatever flavor cravings you may be having that day.  Each season I edit my chia recipe to include whatever is most fresh at the market! AND right now the figs are gorgeous.  It's such a great flavor combo with the chocolate.

How to Make Chia Pudding

  1. Add 2 tablespoon of chia seeds ( I get mine at Trader Joe's) to a jar or bowl and top with ½ cup almond milk (any milk will work).
  2. Stir well with a whisk and place in the fridge.
  3. Let sit in the fridge for a few hours.  If I think about it sometimes I'll go in and give it a stir but not necessary.
  4. When you are ready you can stir and add in any mix-ins like pure maple syrup, cocoa powder or vanilla extract.
  5. Top with goodies galore and you are good to go.
  6. If you love figs try this Salad with Figs.

Ingredients

  • ¼ cup chia seeds
  • 1 cup unsweetened almond milk
  • 1-2 tablespoon cocoa powder
  • 1 tbsp pure maple syrup

Instructions

  • Whisk all ingredients together in a jar or a bowl. Cover and place in the refrigerator for 3-4 hours.
  • When ready to serve, stir well and add toppings of your choice. I added coconut yogurt and pieces of dark chocolate.

Notes

I don't add maple syrup at all because my toppings in this case were sweet.  Feel free to add more or less sweetener as needed.
Feel free to use almond milk, coconut milk, cow's milk, oat milk or hemp milk.  It all works just as well.
Nutrition information is calculated without toppings.
