We have a serious love of all foods Greek and Mediterranean at my house, and this Chicken Gyro Bowl with Rice is our new favorite. My kids love tender grilled smoky chicken like this one! We eat grilled chicken at least once a week in the summer.

This Quinoa and Brown Rice with Garlic is so delicious and it's ready in 90 seconds. Yes, that's what I said. 90 seconds. 

I love that it's convenient, but I don't have to sacrifice flavor. It's packed with garlic, and even my kids love it. Since it's organic, I can feel good about feeding it to my family.

Chicken Gyro Rice Bowl

I found my Quinoa & Brown Rice at my local Safeway in the rice aisle. I love shopping at Safeway, and the mobile app is full of great coupons. I always feel like I get the best price there.

This Chicken Gyro Bowl is perfect for a quick dinner or for meal-prepped lunches during the week. Marinating the chicken in a yogurt lemon marinade makes it tender and flavorful. I use small chicken breasts and pound them out so they cook quickly and stay tender. Watch them carefully on the grill; it should take about 8-10 minutes per side.

The bowls are so easy to put together by layering the Quinoa & Brown Rice on the bottom, along with the grilled chicken gyro, tomatoes, cucumbers, feta, herbs, and tzatziki sauce.

It's the perfect summer dinner!

Ingredients

Marinade

  • ½ cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 4 tablespoon fresh lemon juice
  • 1 tsp kosher salt
  • 1 tablespoon oregano
  • ½ teaspoon dried dill
  • 2 tablespoon olive oil

For Tzatziki Sauce

  • ½ cup Greek yogurt
  • 2 cloves garlic
  • 1 tablespoon apple cider vinegar
  • ¼ cup English cucumber, chopped
  • ½ teaspoon dill
  • salt and pepper to taste

For Chicken Bowls

  • 2 8.5 oz packages of Seeds of Change Quinoa & Brown Rice with Garlic
  • 4 chicken breasts, pounded thin
  • ½ cup sliced grape tomatoes
  • ½ cup cucumbers, sliced
  • ¼ cup crumbled feta cheese
  • fresh chopped dill

Instructions

  • Whisk together all marinade ingredients.  Place chicken in a container or a plastic bag and top with all of marinade.  Make sure all chicken pieces are covered.  Marinate overnight or for a few hours.
  • Preheat grill to medium high and oil the grates. Shake excess marinade off chicken and place on the grill.  Cook until the internal temperature registers 165 degrees, about 8-10 minutes per side. This will depend on how thick your chicken is.
  • While chicken is grilling toss together all tzatziki sauce ingredients.  Add salt and pepper to taste.
  • When chicken is done assemble bowls.  Fill bottom of bowl with Seeds of Change Quinoa & Brown Rice with Garlic.  Top with warm chicken, tomatoes, cucumbers, feta and top with sauce.  

Notes

Great for meal prep.  Make the chicken and keep in the fridge for up to three days.

    I made this dish tonight to use up some leftover grilled chicken. It was delicious, easy to make, healthy, and beautiful! My family loved this dinner, especially the Tzatziki Sauce.
